Pastry making in penitentiary: the social project of Pasticceria Giotto

In 2005, Pasticceria Giotto in Padua brought its pastry laboratory to the Due Palazzi Penitentiary in Padua to work side by side with the inmates.

Every day a team of inmate pastry chefs led by professional masters produces artisanal pastries, a symbol of rebirth, inclusion and social redemption, with the rigor that high pastry making imposes.

Working in the penitentiary represents an important rehabilitative way, with incredible positive effects on the individual and the entire community and, according to available data, it significantly reduces the rate of recidivism and more than 200 inmates have been involved in the training and professional path, till now.

The pastry laboratory has chosen Tenomac to guarantee the quality and freshness of their sweet creations.

Leavened products such as the delicious artisanal panettone are made with the help of our retarder provers which allow you to have total control of time, humidity and temperature, thus offering important advantages in terms of product availability, quality and flavor of the dough.
