Pepper, a modern concept for chilling/freezing and thawing
New control panel, intuitive and user-friendly, for a much more simplified and customizable production flow management. Food quality and safety are guaranteed.
SHOCK FREEZING
It is possible to select two shock freezing cycles, soft or hard, depending on
the product that needs to reach -18°C at the core. At the end of each cycle, the
automatic product conservation at -25°C is set.
BLAST CHILLING
Two blast chilling modalities to select obtaining a cycle that can be more delicate
or intense, in order to achieve the desired result. From a temperature of +90°C, in
90 minutes it is possible to reach +3°C at the product’s core, preserving all food
organoleptic characterises.
Each cycle ends with the automatic conservation of the product at +2°C.
THAWING
A new added value: a thawing cycle, with controlled temperature, in order to preserve
food organoleptic properties is available on the touch interface.
CUSTOM RECIPE BOOK
A dedicated icon to give space to your creativity, introducing your personalized
recipes, saving and storing your favourite and most used cycles.
